Chicken Bomb Con Queso and Veggies Recipe

Summer inevitably evokes barbecue, a tradition to which Frédérike invites you as she introduces you to an exquisite recipe prepared in her brand new outdoor kitchen by Julien!

She has concocted chicken bombs with queso, corn, and roasted peppers, a creation that is both bold and delicious.

To prepare these delights, you will need:

Ingredients

  • 1-2 whole hot peppers (Jalapeño, habanero, according to your tolerance)
  • 3 ears of corn
  • 1 jar of whipped cream cheese
  • 1/2 cup chopped fresh cilantro
  • 3 chopped green onions
  • 1/2 cup grated cotija cheese (can be replaced with grated mozzarella)
  • 1/2 cup grated marble cheddar cheese
  • 4 chicken breasts, pounded flat
  • 1 tbsp Mexican oregano
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp chipotle powder
  • 1/2 tsp salt
  • Freshly ground pepper
  • 1 tbsp brown sugar
  • 12 slices of bacon


Steps

  1. Preheat the BBQ to 400°F (200°C).
  2. Place the peppers and corn directly over the heat and cook for 15 minutes, turning occasionally until they are nicely charred. Remove, chop the peppers, and slice the corn kernels off the cob. Set aside.
  3. In a bowl, combine whipped cream cheese, grated cheeses, chopped peppers, corn kernels, green onions, and cilantro. Mix well and reserve in the refrigerator.
  4. In a small bowl, prepare the rub for the chicken by combining Mexican oregano, cumin, garlic powder, chipotle powder, brown sugar, salt, and pepper.
  5. Rub the chicken breasts with the seasoning mixture.
  6. Place 1/4 of the cheese mixture onto each chicken breast, then fold to enclose the filling.
  7. Wrap each chicken bundle with 3 slices of bacon to seal.
  8. Place the chicken bombs over indirect heat on the BBQ and cook for 15 minutes on each side.
  9. Finish cooking over direct heat to caramelize the bacon.
  10. Remove from heat and let rest for 10 minutes before slicing.
